Ingredients:

  • 2 chicken breasts (40g protein)
  • 1 cup cooked quinoa (8g protein)
  • 1 tbsp olive oil
  • 1 lemon (juice and zest)
  • 1 tbsp chopped fresh herbs (thyme, parsley)
  • Salt and pepper to taste

Directions:

  1. Marinate chicken breasts in olive oil, lemon juice, zest, herbs, salt, and pepper for 10 minutes.
